Squid (Makul): Squid are cephalopods of the order Teuthida. Squid are found abundantly in certain areas, and provide large catches for fisheries. The body can be stuffed whole, cut into flat pieces, or sliced into rings. The arms, tentacles, and ink are also edible. Squid is a good food source for zinc and manganese, and high in copper, selenium, vitamin B, and riboflavin.

Squid Masala:

Ingredients:

  • Squid – 500 gms, cleaned, body cut into rings and tentacles left whole
  • Spring Onions – 1/2 tblsp, chopped
  • Onion – 1, finely sliced
  • Turmeric Powder – 1/2 tsp
  • Red Chilli Powder – 1 tsp
  • Fennel Seeds – 1/2 tsp
  • Coriander Seeds – 1/2 tsp
  • Soy Sauce – 1 tsp
  • Oil – 1 tblsp
  • Curry Leaves – few
  • Garlic – 2 cloves, crushed
  • Ginger – 1 tblsp, minced
  • Coconut Milk – 1/4 cup
  • Lime Juice – 1 to 2 tblsp
  • Salt as per taste

Squid Fry:

Ingredients:

  • Squids – 125 gms, outer skin removed, cleaned, washed and cut into small pieces
  • Oil – 1 tblsp
  • Green Chilli – 1, slit
  • Salt as per taste

Grind to a coarse paste:

  • Garlic – 1 clove, chopped
  • Fennel Seeds – 1 tsp
  • Red Chilli Powder – 1 tsp
  • Turmeric Powder – 1/4 tsp

Method:

  • Heat oil in a pan.
  • Add the squid and green chillies.
  • Fry over low heat.
  • Mix the ground paste with 2 tblsp water and add to the pan.
  • Mix well and cook till water evaporates.
  • Add salt and when dry, remove from heat.
  • Transfer to a serving plate.

Garnish with coriander leaves or spring onions and serve hot with chilli sauce.
